You can triple the recipe and make the granola in bulk.
Ingredients
3/4 cup
Greek yogurt, plain, 2% M.F.
2 scoop
Protein Powder, Bulletproof Whey
1 cup
Soy milk, unsweetened
(or 2% cow's milk; more if you like a thinner yogurt)
2 tsp
Stevia sweetener, powder
2 tbsp
Chia seeds
1/4 cup hulled
Hemp seeds, shelled
2 tbsp
Coconut oil
1 tsp
Vanilla extract, pure
1/4 tsp
Sea salt, fine
1 tsp
Cinnamon
1/4 cup
Almond flour/meal, Bob's Red Mill
1/4 cup
Sesame seeds
1/4 cup
Coconut, shredded, unsweetened
1/4 cup
Quinoa, cooked
1/2 cup
Mixed berries
(can be fresh, or frozen and defrosted (no sugar added))
Instructions
Preheat oven to 325F and set a large baking sheet aside.
Mix yogurt, whey protein, soy milk, stevia, chia seeds, and hemp seeds in a medium bowl and set aside.
Melt coconut oil in a medium pot with vanilla extract.
Add sea salt, cinnamon, almond flour, sesame seeds, coconut, and cooked quinoa. Mix until everything is coated well.
Transfer this mixture to the prepared baking sheet. Place into the preheated oven and bake for 10 minutes. Rotate the baking sheet, bake for another 5 minutes and remove from the oven. Let cool.
Meanwhile, divide your yoghurt mixture between two shallow bowls, top each bowl with half of the granola dust and garnish with berries.
