2 1/4 cup Almond flour (150g)
1/2 tbsp Coconut flour (16g)
1/4 cup Stevia sweetener, powder (40g)
2 tsp Xanthan gum
1/3 cup Almond milk, unsweetened
1 small Orange (zest)
7 tbsp Butter, unsalted (ghee or coconut; slightly soft + a little extra to brush after cooking (30g)))
1 large egg Egg white (- for; wash (optional))
10 tbsp Strawberry jam (sugar free)
1 tsp Vanilla extract, pure
1 pinch Salt
1/2 cup Stevia sweetener, powder (80g)
1 tbsp Water

Instructions


  1. Preheat oven to 350°F (180°C). Line a baking tray with parchment paper and set aside.
  2. In a large bowl, whisk all the dry ingredients (almond flour, coconut flour, granular swerve and xanthan gum). Then add in almond milk, melted butter, and orange zest and mix everything until a dough forms.
  3. Knead the dough for a couple of minutes until you have a ball. Wrap it in plastic wrap and freeze for 10 minutes.
  4. Divide the dough ball in half and roll each half between two pieces of parchment paper into ¼" inch thick rectangles. Then cut each half into 6 rectangles (12 total).
  5. Transfer the rectangles of dough onto a baking tray. Spread 1-2 tbsp of jam, followed by one fresh strawberry cut into slices.
  6. Lay the other rectangles over the filling and seal the edges by pressing them with a fork. Brush the top of the dough with a beaten egg.
  7. Bake for around 20 minutes until golden brown. Let cool on baking sheet for 10 minutes, then finish cooling on wire rack. 
  8. Meanwhile, in a small bowl, whisk together almond milk, confectioners swerve, and food coloring. Add more confectioners swerve if you want more of a glaze consistency. 
  9. Drizzle the icing over the cooled pop tarts and top with sprinkles.
