Ingredients


1 1/2 cup Almond flour
1/4 cup Swerve Sweetener, confectioners (powdered)
1/4 cup Butter, unsalted ((melted (you can use coconut oil)))
1 tsp Vanilla extract, pure
1 tbsp Almond milk, unsweetened (if needed)
1 dash Salt
1/2 cup Swerve Sweetener, granular (brown sugar replacement)
5 tbsp Butter, unsalted
1/2 cup Heavy cream, 38% M.F.
1/2 tsp Vanilla extract, pure
1/4 tsp Xanthan gum
1/4 tsp Salt
114 gm dark chocolate chips sugar free (= 1/2 cup)

Instructions


  1. Start by making the crust. Preheat the oven to 325F/160C and line a baking pan with parchment paper.
  2. Add the almond flour, sweetener, and salt to a large mixing bowl and stir until well combined.
  3. Add the melted butter, vanilla extract, salt, and almond milk (if needed) and mix until the dough is ready.
  4. Press the dough mixture into the bottom of the baking pan and bake it for 15 minutes or until golden brown.
  5. Remove from the oven and set aside.
  6. Make the caramel filling. Add the sweetener and butter to a medium saucepan, and mix until well combined. Bring the mixture to a boil and cook for 3 minutes until bubbling.
  7. Remove the saucepan from the heat, pour the heavy cream and vanilla extract, and whisk to combine everything well.
  8. Sprinkle on the surface of xanthan gum and whisk vigorously to combine.
  9. Then add the salt and bring the mixture to a boil. Let the caramel cook for 3 minutes, remove it from the heat, and cool for 10 minutes.
  10. Pour the caramel over the cooled crust and place the pan in the freezer for 1 hour.
  11. Make the chocolate topping. Add the chopped chocolate to a microwave-safe bowl and microwave until the chocolate it's melted.
  12. Pour the chocolate over the caramel and refrigerate for 30 minutes until the chocolate sets.
