1/2 cup Extra virgin olive oil
1 tbsp Extra virgin olive oil
2 cup Kimchi
1 tbsp Kimchi juice
2 cup Chickpeas, canned, drained (rinsed)
1/4 cup Tahini
3 tbsp Lemon juice
1 dash Kosher salt
1 dash Black pepper


In a large skillet, heat 1 tablespoon of the oil.

Add 1 cup of the kimchi and cook over moderately-high heat, stirring occasionally, until golden, about 5 minutes. Scrape the mixture into a food processor. Add the chickpeas, tahini, lemon juice, the remaining 1 cup kimchi, the kimchi juice, and ¼ cup of water. Pulse to combine.

With the machine on, slowly drizzle in the remaining ½ cup oil until smooth. Season with salt and pepper.
