Ingredients

Lettuce, spring mix (mesclun)
1/2 medium
Tomato
1 tbsp
Pumpkin seeds (pepitas)
1/2 medium
Carrots
(greted)
1/2 medium
Cucumber, peeled
(sliced)
1/2 medium pepper(s)
Red bell pepper
(diced)
1/4 cup
Bean sprouts
1/4 cup slices
Avocado
2 tbsp
Balsamic Vinaigrette

Chicken breast, boneless, skinless, grilled
(or fish or turkey)
Instructions
In a bowl, toss everything together EXCEPT the dressing. Separate and store in 3 individual storage containers. Measure one serving of the dressing and store in a separate small container. Add to salad at meal time.
