Keto Lamb Curry with Spinach - Saag Gosht

Prep it the evening before. Place ingredients in the slow cooker in the morning. Come home to an amazing home-cooked meal.

Ingredients


1 medium Red onion (quartered and sliced)
2 clove(s) Garlic
2 tbsp minced Ginger root
2 tsp Cardamom, ground
6 clove Cloves (whole)
2 tsp Coriander, ground (ground)
1 tsp Turmeric, powder
1/2 tsp Chili powder
1 tsp Garam masala
2 tsp Cumin
500 gm Lamb, cubed for stew, lean
500 gm Spinach (fresh)
1 can(s) (14oz) Diced tomatoes, canned

Instructions


  1. Place all the ingredients in the slow cooker (except for the spinach) and stir.
  2. Cook on HIGH for 4-5 hours or LOW for 8 hours.
  3. Mix in the spinach right before serving, allowing the heat to wilt it.

 

If you don't have a slow cooker:

  1. Add all the ingredients to a large pot (except the spinach) with 1 cup water.
  2. Bring to a boil, then lower the heat to a simmer and cook with the lid on for 2-3 hours (the longer you cook it the more tender the meat will be).
  3. Mix in the spinach right before serving, allowing the heat to wilt it.

    Omit the onion, they will cube lamb for you at central market. This would be delicious served over cooked lentils (Trader Joe's has them in their product section) or over quinoa which is technically a grain but was not sure if you ate this at all. Or could even serve sweet potato with this or have it as it is with a salad or sauteed spinach in butter.
