Lamb Meatballs with Mint Gremolata

908 gm Lamb, ground (organic)
2 large egg Egg
1/2 cup Almond flour/meal, Bob's Red Mill
1/4 cup Parsley, fresh (chopped)
1 clove(s) Garlic (minced)
1 1/2 tbsp Za'atar
1 tsp Sea Salt
3 tbsp Water, filtered
2 tbsp Extra virgin olive oil
2 tbsp Parsley, fresh (gremolata)
2 tbsp Mint, fresh (gremolata)
1 tbsp Lime peel (zest) (gremolata)
2 clove(s) Garlic (gremolata)


For the meatballs:

  1. Combine the meatball ingredients (except olive oil) in a medium bowl and mix well.
  2. Form into 24 one and a half inch (approximately) meatballs.
  3. Heat the olive oil in a nonstick saute pan over medium heat.
  4. Cook the meatballs in batches until brown on both sides and cooked through – about 2-3 minutes per side.
  5. Remove cooked meatballs and place on a paper towel lined plate until ready to serve.
  6. Serve warm, sprinkled generously with gremolata.


For the gremolata:

  1. Chop herbs and garlic.
  2. Combine the ingredients in a small bowl and mix well.
