|2 tbsp||Lemon juice|
|1 cup||Greek yogurt, plain, fat-free (or coconut, for vegan)|
|1 scoop||Whey protein powder, unflavoured (or vegan protein)|
|1/2 tsp||Lemon peel (zest)|
|1 tsp||Vanilla extract, pure|
|1 tsp||Coconut sugar|
|1/8 tsp||Turmeric, ground (1 dash)|
1. Squeeze the lemon juice into the Greek yogurt, and stir in the protein powder. Add the lemon zest, vanilla extract, and honey. Mix well.
2. Sprinkle the coconut sugar and turmeric on top, and let sit in the fridge for at least two hours. You can also leave it overnight. Garnish with blueberries, and serve.
You can also layer the parfait by creating a yellow fruit layer with mango and turmeric.
Add nuts, seeds, granola or any other toppings of choice.
