1 tbsp Chia seeds, ground
3 tbsp Water, filtered
1/2 cup Almond milk, unsweetened
1/2 cup Greek yogurt, plain, 5% M.F., Liberte
1 whole lemon(s) Lemon peel (zest)
1 scoop fermented vegan proteins+ (vanilla), Genuine Health
2/3 cup Gluten free flour
1/3 cup Coconut, shredded, unsweetened
1/2 cup Frozen blueberries
1 tbsp Coconut oil


  1. Add ground chia seeds to a large bowl with water, let sit while you mix dry ingredients.
  2. Take some blueberries out of the freezer and set aside in a small bowl.
  3. Mix the protein powder, gluten-free flour, and coconut in a medium-sized bowl and set aside.
  4. Add almond milk, yogurt, and lemon zest to the chia seeds.
  5. Add the dry ingredients to the wet ingredients and mix well.
  6. Melt 1 tbsp coconut oil in a frying pan to medium temperature.
  7. Spoon batter into hot pan. Drop blueberries into wet batter.
  8. When batter starts to bubble, flip pancakes.
  9. Top with plain yogurt and maple syrup or jam. Enjoy!
