Preheat oven to 350 degrees F (175 degrees C), and prepare baking pans.
In a large mixing bowl, stir together the flour, salt, sugar, baking powder, baking soda, and poppy seeds.
Add the eggs, almond milk, oil, vanilla, maple syrup and lemon juice/zest; mix until smooth. Pour batter evenly into the prepared pan(s).
Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan(s) for 10 minutes before removing to a wire rack.
