1. Trim the most of the green ends and a little off the bottom end from the lemongrass stalks.
2. Peel the garlic and ginger.
3. You can now chop or use a food processor. Finely chop the lemongrass, ginger and garlic.
4. Once your ingredients are finely chopped, you want to pound and smooth into a paste adding the remaining ingredients. If you want additional flavor, you can add lemon juice and/or lemon zest. You can season with salt to taste.
