Ingredients


2 tbsp Canola oil
3 tbsp Cilantro (coriander) (chopped)
1 cup Green lentils, canned (drained and rinsed)
2 tbsp Green onion, scallion, ramp (chopped)
1 tbsp Jalapeno pepper (chopped)
4 tbsp Lime juice (fresh)
1 tbsp Lime peel (zest)
1 medium pepper(s) Red bell pepper (chopped)
1/2 tsp Black pepper
1/2 tsp Salt
3 1/2 cup Sweet corn, canned, undrained

Instructions


1. Toss rinsed corn kernels with lentils, peppers, and onion.

2. In a small bowl whisk jalapeño pepper, lime juice and zest, cilantro, canola oil, salt and pepper together and toss with corn and lentil mixtures.

Serve warm or cold, and enjoy!
