3 tbsp | Cilantro (coriander) (chopped) |
1 cup | Green lentils, canned (drained and rinsed) |
2 tbsp | Green onion (chopped) |
1 tbsp | Jalapeno pepper (chopped) |
4 tbsp | Lime juice (fresh) |
1 tbsp | Lime peel (zest) |
1 medium pepper(s) | Red bell pepper (chopped) |

3 1/2 cup | Sweet corn, canned, undrained |
1. Toss rinsed corn kernels with lentils, peppers, and onion.
2. In a small bowl whisk jalapeño pepper, lime juice and zest, cilantro, canola oil, salt and pepper together and toss with corn and lentil mixtures.
