|1/2 cup||Red lentils, raw (or orange)|
|3/4 cup||Sun-dried tomatoes|
|2 cup chopped||Tomato|
|1 tbsp||Chili powder|
|1 tsp||Sea salt|
|1/4 cup||Cilantro (coriander) (chopped)|
1. Soak lentils in a bowl of water in the fridge for 18 hours. Drain and set aside.
2. Process sun-dried tomatoes, tomatoes, garlic, chili powder, cumin and sea salt in a food processor until combined.
3. Add lentils and process with a few quick on and off turns. Mixture should be chunky.
4. Remove from food processor. Stir in the cilantro and serve.
