|1/2 cup||Lentils, raw|
|1 cup||Spinach (packed)|
|1 cucumber(s)||Cucumber (peeled, roughly chopped)|
|2 large||Apple (peeled, roughly chopped)|

|2 tbsp||Chia seeds, ground|
|1 tsp minced||Ginger root|
|1 tsp||Matcha, green tea powder|
|1 cup||Coconut water (liquid from coconut) (or filtered water)|
Add lentils and 1.5 cups water to a small saucepan and bring to a boil. Cook until lentils are tender, about 15 minutes.
Drain any excess water and allow to cool slightly.
Combine lentils and remaining ingredients to blender and blend until smooth. Add additional water as needed to create desired consistency.
