6 cup Chicken broth (stock), low sodium
1 tbsp Extra virgin olive oil
2 clove(s) Garlic (chopped)
1 medium potato(es) Sweet potato (cut into 1/2-inch pieces)
2 cup slices Turkey sausage (Kielbasa) (casing removed)
1 onion(s) Sweet onion (chopped)
1 bunch Black kale
1 1/2 medium Carrots (chopped)
2 medium stalk(s) Celery (chopped)

Instructions


Heat oil in large pot over med-high heat. Add sausage and cook until browned- about 8-10 mins.

Add onions, celery and onion and cook- about 5 mins until vegetables are softened. Add garlic and cook- about 1 min. Add broth, kale and sweet potatoes.

Bring to boil, reduce heat and simmer until  sweet potatoes are tender- about 30-35 mins.
