Lentil Macaroni and Cheese

1 cup Pasta, macaroni, elbow, whole wheat, dry
3/4 cup Lentils, raw
2 tbsp Butter, unsalted
2 clove(s) Garlic (minced)
4 cup Frozen vegetable mix (or fresh)
1/2 package (10oz) Frozen spinach (defrosted, squeezed)
2 tbsp All-purpose white flour
1 1/2 cup Partly skimmed milk, 1% M.F.
142 gm Cheddar cheese, reduced fat (18%) (grated)
1 tsp Paprika
1/2 tsp Cayenne pepper (optional)


Cook pasta according to package directions.

Cook lentils according to package directions.

While pasta and lentils are cooking, melt butter in a large saute pan. Add garlic and vegetables and saute for 10 minutes.

Sprinkle vegetables with flour.

Add milk and cheese and stir until well combined.

Stir in cooked pasta and lentils, add spices and serve warm.
