Lentil Spaghetti Bolognese

1 onion(s) Sweet onion (chopped)
2 medium Zucchini (chopped)
1 large pepper(s) Red bell pepper (chopped)
4 clove(s) Garlic (crushed)
4 medium Carrots (peeled and chopped)
1 cup White wine, dry (non-alcoholic)
1 cup Partly skimmed milk, 2% M.F.
1 cup Red lentils, split
2 can (19oz) Whole tomato, canned
1 tsp Nutmeg, ground
2 cup Gluten free spaghetti, dry (prepare as per package instructions)


1. Fry the onions until soft.

2. Add the rest of the vegetables and allow them to cook until soft (around 5 mins).

3. Add the white wine, milk, tomatoes, nutmeg, and red lentils. Simmer for half an hour.

4. Season to taste.
