This recipe can also be used to make lentil burgers. As tacos or burgers it freezes well so is a great option for meal prepping. Inexpensive and nutritious!


2 cup Green lentils, raw
1 cup Quinoa, uncooked (rinse)
1/2 cup Salsa, ready-to-serve
2 tbsp Turmeric, powder
1 tbsp Cumin
1 tsp Onion powder
1 tsp Garlic powder
1 tsp Salt


Cook everything in same pot and according to lentil directions. Use as meat in tacos or form into burger patties and cook for a few minutes on each side over medium heat on stovetop.

Instant Pot: Mix all ingredients with 3 cups water and cook manual 12 minutes and natural pressure release.

Smaller - 3 servings:  1 cup green lentils, 1/2 cup salsa, 2 tsp cumin, 1 tsp each salt/garlic, 1/2 cup diced onion, 1 can pinto beans (drained/rinsed) or 1/3 cup quinoa.  Cook stovetop with 2 cups water.
