1. Place olive oil in a skillet on medium heat.
2. Sauté the garlic and onion until soft and translucent.
3. Add lentils and seasonings, and stir well. Add the water and bring to a boil. Reduce to medium heat and occasionally stir for 25-30 minutes, until lentils are tender and slightly soft (all of the water should be absorbed, and should not be mushy).
4. Stir in the salsa and heat for another 3-4 minutes.
5. Serve over a bed of lettuce for a taco salad or with whole grain tortillas.
