One of my favorite brain boosting foods. You too will enjoy this juicy, tender beef stew that's not only delicious, but is healthy too!
Ingredients
3 tbsp
Licorice Root Powder
(brew into strong tea)
3 cup
Water, filtered
(boiled)

Beef, stewing beef
(grass fed, organic)
2 tbsp
Tapioca starch
(or gluten free flour or cornstarch)
1 tbsp
Paprika
(mild)
3/4 tsp
Sea Salt
1/2 tsp
Black pepper
(freshly ground)
3 tbsp
Coconut oil
(or olive oil)
1 onion(s)
Sweet onion
(diced)
2 medium pepper(s)
Red bell pepper
(or yellow, orange, diced)
1 bulb(s)
Fennel
(diced)
2 tbsp
Tomato paste, organic
Instructions
Prepare the tea by pouring hot water over the licorice root powder, cover for 15 minutes and strain.
Place meat on a plate along with the tapioca starch or cornstarch, paprika, salt, and pepper. Mix well.
Warm oil in a large stockpot over medium heat. Add beef and cook 4 to 5 minutes, turning occasionally, until well browned. Transfer to a plate.
Add onions, peppers, and fennel and cook 4 to 5 minutes on medium heat until they begin to soften. Add tomato paste and cook 1 minute more.
Return beef to the pot along with the tea. Bring to a simmer, then cover. Cook over low heat for 1½ to 2 hours, until beef is very tender.
