Light and Fluffy Corn Bread

1 1/4 cup Whole wheat pastry flour
1 cup Cornmeal (yellow) (or yellow corn flour)
1/4 cup Coconut sugar
1 tbsp Baking powder
1/4 tsp Salt
1 1/4 cup Almond milk, unsweetened (or 2% milk)
3 tbsp Butter, unsalted (melted)
2 large egg Egg


Preheat oven to 350┬░ F.

In a medium bowl, mix flours, sugar, baking powder and salt. Add milk, butter and egg, mixing until just combined. Pour into a greased 8“ X 8” brownie pan.

Bake for approximately 20-25 minutes, or until the top is golden brown.


Using corn flour rather than cornmeal produces a finer crumb and a lighter texture.
