Ingredients


1 avocado(s) Avocado (peeled, pitted, thinly sliced, for salsa)
1 kg Beef, flank, lean
1 cup Beer, light (4% alcohol) (preferably lager)
1/4 tsp Black pepper (to taste)
2 tsp Cilantro (coriander) (chopped, for salsa)
4 clove(s) Garlic (halved, smashed, divided)
1 stalk(s) Green onion (thinly sliced, for salsa)
1 head Lettuce, butterhead (Boston) (leaves separated, for salsa)
1 whole lime(s) Lime juice (fresh) (for salsa)
1 medium Orange (unpeeled, thinly sliced, divided)
1/4 tsp Salt (to taste)
1/2 pepper(s) Serrano pepper (seeded, minced, for salsa)
1/3 cup Soy sauce, low sodium (for salsa)
1/2 medium Yellow onion (peeled, thinly sliced, divided)

Instructions


To prepare the steak:

  • Scatter half the orange slices, half the onion slices, and half the garlic pieces on the bottom of a glass dish large enough to hold the flank steak.
  • Sprinkle the flank steak all over with salt and pepper and place in the prepared baking dish.
  • Scatter the remaining oranges, onions, and garlic over the flank steak and pour the beer over.
  • Cover with plastic wrap and let stand for 1 hour at room temperature or overnight in the fridge.
  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • Remove the meat from the marinade. Discard the marinade. Grill the steak to desired doneness, about 4 minutes per side for medium-rare. Let the steak rest for 10 minutes. Transfer the grilled flank steak to a cutting board and cut crosswise into strips.


To prepare the salsa:

  • In a small bowl mix together the salsa ingredients.


To assemble:

  • Using the butter lettuce leaves, make tacos using slices of flank steak and avocados. Drizzle with the salsa.

Notes:

Steak

supplies a good amount of vitamin B12, it is a great source of protein which helps build muscles and strong bones

Avocado

is a great source of monounsaturated fatty acids, which are good for heart health
