Loaded Mashed Cauliflower Casserole

2 medium slice Bacon (uncured)
3/4 medium head Cauliflower (1 small head)
1/2 cup, shredded Cheddar cheese (sharp)
2 tbsp Extra virgin olive oil
2 clove(s) Garlic
1 green onion (stem) Green onion, scallion, ramp (chopped, optional garnish)
1/8 tsp Paprika
1/2 cup Plain yogurt, 1- 2% M.F.
1 dash Salt and pepper
1/2 medium Yellow onion (sliced)


Cut cauliflower into florets and steam for about 20 minutes, until tender.

Meanwhile, brown bacon until crisp; drain and crumble.

Heat olive oil in small skillet and sauté onion until translucent; add garlic and sauté until onions are browned.

Transfer cooked cauliflower to food processor along with yogurt and process until smooth. Season to taste with salt and pepper. Scrape mixture into a baking dish and sprinkle cheese and paprika on top. Broil until cheese is melted.

Top casserole with sautéed onions, bacon pieces and chopped scallion.

Serve and enjoy!
