Low Carb Cilantro Lime Cauliflower 'Rice'

1 medium head Cauliflower
2 tbsp Butter, unsalted
1/2 tsp Salt
1 dash Black pepper
3 tbsp Cilantro (coriander) (chopped)
2 tbsp Lime juice (fresh)
1 pinch Salt and pepper (to taste)


  1. Cut cauliflower into florets and discard core and leaves. Place florets in a food processor and process on low until they resemble grains of rice.
  2. In a large skillet over medium heat, melt butter until it begins to froth.
  3. Add cauliflower, salt and pepper and toss to coat in the butter.
  4. Cook, stirring frequently, until tender-crisp and beginning to brown, about 5 minutes.
  5. Remove from heat and add chopped cilantro, lime juice and any additional salt and pepper to taste.
