Low Carb Slow Cooker BBQ Meatloaf

Low carb BBQ meatloaf made in your slow cooker. Dinner is stress-free, grain-free and sugar-free. And it's delicious!


908 gm Beef, ground, lean (see "Notes' below)
454 gm Pork, ground, lean (see "Notes' below)
1/2 cup White onion (chopped fine)
1/2 cup Almond flour/meal, Bob's Red Mill
1 tsp Salt
1 tsp Black pepper
1 tsp Garlic powder
2 large egg Egg
1 can(s) (14oz) Diced tomatoes, canned (Chipotle Whiskey Barbecue Sauce)
8 tbsp Swerve Sweetener, granular (Chipotle Whiskey Barbecue Sauce)
1 tbsp Worcestershire sauce (Chipotle Whiskey Barbecue Sauce)
1 clove(s) Garlic (minced; Chipotle Whiskey Barbecue Sauce)
1 tsp Salt (Chipotle Whiskey Barbecue Sauce)
5 tbsp Whiskey, Jack Daniels (1/3 cup; or rum; Chipotle Whiskey Barbecue Sauce)
1/3 cup Apple cider vinegar (Chipotle Whiskey Barbecue Sauce)
1 tsp Chili powder (Chipotle Whiskey Barbecue Sauce)
1/4 tsp Chipotle seasoning, Dean Jacob's (more or less depending on how hot you like it)


  1. In a large bowl, combine ground beef, ground pork, onion, almond flour, salt, pepper and garlic powder. Add in eggs and mix well with your hands until fully combined.
  2. On a large sheet of tinfoil, shape mixture into loaf roughly 5 x 9 inches, and place in a 6 quart slow cooker.
  3. Set slow cooker to low and cook 5 to 6 hours. In the last half hour of cooking, brush the top and sides with about 1/3 cup barbecue sauce.
  4. Use two serving forks to lift the meatloaf out of the slow cooker and onto a serving platter. Slice and serve with remaining barbecue sauce.

If you can't find lean beef and pork, make sure to put a rack or some balled up tinfoil in the bottom of your slow cooker. Otherwise, your meatloaf will be swimming in grease by the end of cooking.
