Easy homemade vegan tacos that are flavorful and FODMAP friendly!

Ingredients


341 gm Tofu, regular, extra firm (press to dry with paper towel)
2 tbsp Avocado oil (or other neutral oil)
2 tbsp Tamari, gluten free, reduced sodium
1 tbsp Paprika, sweet
1 tsp Cumin
1/2 tsp Oregano, dried
1/4 tsp Coriander, ground
1/4 tsp Paprika, smoked
1 tbsp Tomato paste, canned
2 cup Coleslaw mix
1/2 cup Cilantro (coriander) (chopped)
1/4 cup slices Jalapeno peppers, sliced, canned (pickled; chopped)
1 tbsp Mayonnaise, vegan
1 pinch Salt
1 tbsp Lime Juice (fresh)
1/4 cup Mayonnaise, vegan (for spicy mayo)
1 tbsp Hot sauce (for spicy mayo; e.g. Valentina)
1 tbsp Lime Juice (for spicy mayo; freshly squeezed)
1 dash Salt (for spicy mayo)
8 small tortilla(s) Tortilla, corn (white corn)

Instructions


  1. Preheat the oven to 400℉ (200℃). Prepare a rimmed baking sheet with parchment paper.
  2. In a medium bowl, whisk oil, tamari, seasonings, and tomato paste until smooth. Crumble the tofu into the sauce mixture and evenly coat it with the sauce.
  3. Spread the tofu onto the baking sheet and bake for 15 minutes. Stir, then bake for 5-10 more, less for a more tender crumble and more for a crispy/chewy crumble.
  4. While the tofu crumbles are baking, mix the slaw ingredients together in a medium bowl (coleslaw mix, cilantro, jalapeno, mayo, salt, and lime juice.
  5. In a small bowl, mix the spicy mayo ingredients together.
  6. Warm corn tortillas in the microwave to soften if needed.
  7. Serve the taco crumbles on tortillas, topped with slaw and spicy mayo.
