These low FODMAP beef tacos are super tasty and are perfect for a quick weeknight meal or a fun taco night with the family.
Ingredients

Iceberg lettuce

Instructions
Place the iceberg lettuce, red cabbage, carrot, and green onion leaves in a bowl and squeeze in the lemon juice. Season with salt and pepper, then toss the slaw to mix well.
Next, combine the oregano, paprika, smoked paprika, cumin, ground coriander, chili powder, salt, and black pepper in a small glass or bowl to make the taco seasoning.
Place a large non-stick frypan over medium-high heat. Once hot add the garlic-infused oil, beef, green bell pepper, and leek leaves. Cook until the beef is browned and slightly crispy.
Sprinkle the taco seasoning over the beef mixture and cook for 1 minute until fragrant. Add the tomato paste and water and stir to combine. Turn the heat to medium-low and allow to simmer until the liquid evaporates.
Heat the corn taco shells according to the packet instructions.
To assemble the tacos, fill each taco shell with the homemade slaw and beef mixture, then top with a dollop of sour cream and a sprinkle of cheese. Garnish with fresh cilantro if desired. Serve any extra beef and slaw on the side. Enjoy!
