This unique granola recipe uses quinoa flakes and mood-boosting dark chocolate! A great snack or addition to your breakfast.

Quinoa flakes, organic
(or rolled oats)
1 cup
Quinoa puffs
(or puffed rice)
1 cup
Pumpkin seeds (pepitas)
(chopped)
1 cup
Sunflower seeds
(chopped)
1/2 cup
Coconut chips
(or dried shredded)
6 tbsp
Cocoa powder, unsweetened
4 tbsp
Brown sugar
4 tbsp
Maple syrup
1 tsp
Vanilla extract, pure
6 tbsp
Extra virgin olive oil
100 gm
Dark chocolate
(chopped into small chunks)
1 dash
Sea Salt
Instructions
Preheat the oven to 120ºC (250ºF).
In a large bowl, combine the dry ingredients: quinoa flakes, chopped sunflower and pumpkin seeds, coconut chips, brown sugar, Dutch cocoa powder, and quinoa puffs.
In a separate bowl, whisk together the olive oil, vanilla, and maple syrup. Pour over the dry ingredients and mix well to coat evenly.
Spread the granola mixture evenly across two baking trays lined with parchment paper. Bake for 20 minutes, then gently shake or stir the granola. Continue baking for another 15 minutes.
Add the dark chocolate chips and a sprinkle of sea salt (to taste), then bake for a final 5 minutes.
Allow the granola to cool completely for 1 to 2 hours. Store in airtight jars or containers.
Enjoy ½ cup as part of your breakfast or a snack! It pairs perfectly with coconut yogurt and fresh fruit.
