This simple Low FODMAP Garlic Mushroom Pasta recipe incorporates garlic-infused olive oil and (low FODMAP) oyster mushrooms for one delectable dish!
Ingredients

Brown rice pasta
((fettuccine))
4 tbsp
Butter, salted
(or ghee)
298 gm
Oyster mushroom
((three 3.5oz packages), trimmed and sliced)
2 tbsp
Extra virgin olive oil, garlic-infused
Salt
(to taste)
Chives
(green parts ONLY, optional)
Instructions
Cook pasta according to package instructions. Once done, rinse, drain and set aside.
Meanwhile, heat 2 Tbsp. butter in a large skillet over medium-high heat. Add mushrooms and cook, stirring frequently, until mushrooms are tender. Remove mushrooms from heat until pasta is done.
Add cooked pasta, remaining 2 Tbsp. butter and olive oil to cooked mushrooms. Return skillet to medium heat, stirring until butter is melted and everything is hot. Season with salt, to taste, and serve topped with optional chives.
