Low FODMAP Mediterranean Baked Fish

A simple but delicious recipe for Mediterranean style baked fish

Ingredients


750 gm Red mini potato (use any color mini or cut up larger ones)
250 gm Cherry Tomatoes (on the vine)
70 gm Black olives (pitted)
4 fillet Haddock (skinless; or any similar white fish)
2 tbsp Extra virgin olive oil, garlic-infused
1 medium Lemon (Juice of)
1 pinch Salt and pepper
1 bunch Basil, fresh (of fresh; leaves roughly chopped or torn)

Instructions


  1. Preheat the oven to 200 degrees C (400 F/ gas6)
  2. Boil the new potatoes for 15 minutes until just cooked and drain
  3. Place the potatoes in a large baking tray (or use 2 smaller ones) followed by the olives and tomatoes and lay the haddock fillets on top
  4. Drizzle the garlic flavoured olive oil over the fish and potatoes and squeeze over the lemon juice
  5. Add a pinch of salt and pepper, cover the tray loosely with tin foil and transfer to the oven to cook for 15 minutes. Ensure fish is cooked through
  6. Once cooked, sprinkle over the basil leaves then serve
