3 tomato Roma tomatoes (seeded and diced)
1/4 cup Green onion (green parts ONLY; diced)
1 tbsp Parsley, fresh (minced)
2 tbsp Lemon juice (fresh squeezed)
1 tbsp Extra virgin olive oil
dash Salt and pepper (to taste)

Instructions


  1. Place all ingredients in an airtight container. Shake well and refrigerate for at least 2 hours before serving. Keeps for 2 days.
