If you’re using leftover veggies just throw them in near the end — and make sure they’re kid-approved if you want them to eat it while they feel rotten.
Melt butter in a large pot. Add onions, celery and a pinch of salt and saute for 5 minutes. Add carrots (if using raw), garlic and saute another 5 minutes. Stir in basil, oregano and thyme. Pour in homemade broth, add cooked chicken and simmer for 15 minutes or so. Then add cooked noodles, parsley and season with salt and pepper.
(You may throw noodles in raw to cook, however — the soup with become very starchy).
This soup is done in less than 30 minutes.
