2 potato Potato (small; chopped, boiled)
1 medium Egg (hard-boiled, chopped)
1/3 cup Green/yellow string beans, raw (boiled 2 minutes and blanched)
20 ml Extra virgin olive oil (for dressing)
1 1/2 tsp Apple cider vinegar (for dressing)
1 clove(s) Garlic (crushed, for dressing)
1/4 tsp Dijon mustard (for dressing)
1/4 tsp Honey (for dressing)
5 tomato Cherry Tomatoes (halved or whole)
1 tbsp Basil, fresh (minced)
1 tbsp Parsley, fresh (minced)

Instructions


  1. Boil the Potato:
    • Bring water to a boil.
    • Add potatoes and cook in gently boiling water until potatoes are tender; 15-20 minutes.
  2. Boil the Egg:
    • Place egg in a pot and fill with water until 1 inch above the egg.
    • Bring water to a rolling boil. Turn off the heat and cover. Let sit for 10-12 minutes.
    • Remove from water using a strainer and rinse under cold water. Peel and chop.
  3. Blanch the Green Beans:
    • Prepare a large bowl with ice water. Set aside.
    • Bring a saucepan with water to a boil. Add the green and/or yellow string beans and cook in gently boiling water for 3-5 minutes, or until tender-crisp but still bright green.
    • Transfer beans to the ice bath to stop the cooking process.
  4.  Whisk the olive oil, apple cider vinegar, garlic, Dijon mustard, and honey together in a small bowl or glass measuring cup.
  5. Combine the potatoes, egg, beans, tomatoes, basil, and parsley in a large bowl. Pour in the salad dressing and toss to coat.
  6. Serve potato salad warm or cold.
