412 gm Pasta, macaroni, elbow, whole wheat, dry (cooked according to package instructions)
3/4 onion(s) Sweet onion
1 cup whole Baby carrots
4 florets Broccoli florets
1 cup shredded Cheddar cheese, reduced fat (18%)
1 cup, shredded Mozzarella cheese, partially skimmed
1 large egg Egg
5 tsp Extra virgin olive oil
1 cup Bread crumbs, whole wheat (divided)


  1. Cook pasta as per package instructions.
  2. Preheat oven to 350°F and lightly grease the tins of a muffin pan
  3. Puree onion, carrots, and broccoli in a food processor, or blender, until smooth.
  4. Mix cheddar, mozzarella, egg, and olive oil in large bowl. 
  5. Add cooked macaroni, pureed vegetables, and half of the bread crumbs. Stir until just incorporated.
  6. Spoon mixture evenly into 6 tins. 
  7. Sprinkle remaining bread crumbs on top and bake for 30 minutes, or until lightly browned.
