3/4 onion(s) Sweet onion
1 cup whole Baby carrots
4 florets Broccoli florets
1 cup shredded Cheddar cheese, reduced fat (18%)
1 cup, shredded Mozzarella cheese, partially skimmed
1 large egg Egg
5 tsp Extra virgin olive oil
412 gm Pasta, macaroni, elbow, whole wheat, dry (cooked according to package instructions)
1 cup Bread crumbs, whole wheat (divided)


Preheat oven to 350°F.

Puree onion, carrots and broccoli in food processor or blender until smooth.

Mix cheddar, mozzarella, egg, and olive oil in large bowl. Add cooked macaroni, vegetables and ½ cup bread crumbs. Stir until just incorporated.

Spoon mixture evenly into greased muffin pan. Sprinkle remaining bread crumbs on top and bake 30 minutes, or until lightly browned.
