Peel and roast garlic bulbs in oven at 450 degrees celsius for 20 minutes.
Meanwhile, bring water to a boil and place peeled and cut plantains to simmer in water for about the same amount of time (20 minutes) or until soft when poked with a fork.
Drain water and mash plantains with all of the ingredients - including the roasted garlic (which you can chop up after roasting to make for easier & smoother mashing!).
