Mahi-Mahi with Pineapple Salsa

1 1/2 cup diced Pineapple
1/4 cup Red onion (chopped)
1/2 cup chopped Red bell pepper (diced, seeded)
1 tbsp Mint, fresh (chopped)
1 tbsp Lime juice (fresh)
1 tbsp Canola oil (avocado or grapeseed oil)
4 fillet (7oz) Dolphinfish (mahi mahi)
1/4 tsp Black pepper


1. In bowl, combine pineapple, onion, red pepper, mint, and lime juice; refrigerate until ready to serve.

2. In non-stick skillet, heat canola oil (or other oil of choice) over medium heat.

3. Add fish and sprinkle with pepper. Cook for 3 – 5 minutes. Turn and cook for additional 3 – 5 minutes or until desired doneness.

4. Top fish with salsa and serve.
