Ingredients


4 cup Lettuce, spring mix (mesclun)
2 mango Mango (cut into 1-inch pieces)
1 small Cucumber (chopped)
1/4 cup Extra virgin olive oil (for the dressing)
1 fruit Lime (juiced for the dressing)
1 tbsp Apple cider vinegar (for the dressing)
2 avocado(s) Avocado (cut into large chunks)
1/4 tsp Sea salt, fine (for the dressing)
1/2 cup Coconut chips (thick)

Instructions


1. Place all the salad ingredients in a large bowl except the coconut chips and avocados.

2. Place all the ingredients for the dressing in a small bowl and whisk.

3. Add the salad and toss to combine.

4. Garnish with coconut chips and chunks of avocado.

Notes:

Avocados

are a great source of monounsaturated fatty acids which are SO important for heart health!

Serve this recipe on the side with chicken breast or pork chops!
