Yummy roasted carrots recipe with maple syrup and dijon mustard. Easy peasy and takes only 10 mins active time!
Ingredients

Baby carrots
2 tbsp
Ghee
(melted)
1 tbsp
Maple syrup
1 tbsp
Dijon mustard, whole grain
dash
Salt and pepper
2 tsp
Parsley, fresh
(finely chopped)
Instructions
Preheat the oven to 400°F. Toss the carrots with the melted ghee, maple syrup, dijon mustard, a big pinch of salt and ground black pepper. Make sure each carrot is nicely coated. Transfer the carrots on a baking sheet lined with parchment paper, distribute evenly in one single layer. Roast for about 25-30 minutes, or until the carrot is fork-tender and completely cooked through.
