Preheat oven to 325˚ F. Line a baking pan with parchment paper and set aside. Place maple syrup, cinnamon and vanilla in a small bowl and whisk with a fork to combine. Add walnuts and coconut and stir to coat them with the syrup. Spread on the baking pan.
Place in the oven and bake for 20-25 minutes, stirring several times until the walnuts and coconut are lightly browned. Remove from the oven and let cool. Mixture will become crunchy and dry as it cools. Serve on top of chia pudding or store in an airtight container until ready to use.
