|12 medium potato||Sweet potato (chopped)|
|1/3 cup||Maple syrup|
|2 tbsp||Avocado oil (or butter)|

1. Preheat oven to 400F degrees.
2. Arrange sweet potatoes in an even layer in a large baking dish. Combine maple syrup, avocado oil, lemon juice, salt and pepper in small bowl. Pour the mixture over the sweet potatoes; toss to coat.
3. Cover and bake the sweet potatoes for 15 minutes. Uncover, stir and cook, stirring every 15 minutes, until tender and starting to brown, 30 to 45 minutes more.
To save time, buy ready-cut sweet potato cubes found at most grocery stores.
High in vitamins A, C, B5 and B6. They are also high in fiber and help with blood sugar regulation.
