Maple Vanilla Brown Rice Pudding

1 cup Brown rice, short-grain, dry
2 1/2 cup Whole milk 3.3% (or coconut milk)
1/2 tsp Sea Salt
1 pod Vanilla bean
1/4 cup Maple syrup, pure
1 tsp Cinnamon
1 dash Nutmeg, ground
1/4 cup Raisins, seedless (sultana) (optional)


Soak rice overnight in room temperature water with a splash of lemon juice. Rinse well and place in heavy pot with milk and salt.

Slice open vanilla bean and slide out the inner goo - place it in the pot. Bring to boil then turn to low and simmer about an hour, or until all the liquid is absorbed. Add more liquid if you’d like it even creamier.

Halfway through cooking add remaining ingredients. Serve cold or warm with berries, bananas or toasted nuts if eating at home.
