Marinated Artichoke and Cauliflower Salad

1 medium head Cauliflower
1 can (13.5 oz) Artichoke hearts, canned (or frozen)
1/2 medium Red onion (chopped)
1 tbsp Parsley, fresh (chopped)
1/2 cup Extra virgin olive oil (for dressing)
3 tbsp Lemon juice (for dressing)
1 clove(s) Garlic (for dressing)
1/2 tsp, ground Basil, dried (for dressing)
1 pinch Salt and pepper (for dressing)


Cut cauliflower into bite size pieces and steam for about 8 minutes, just until tender.

Prepare artichokes according to package if using frozen. When both have cooled, combine in a mixing bowl with onions and parsley.

Combine dressing in a small mixing bowl or large cup. Whisk until combined.

Toss with vegetables and chill overnight.
