Tortellini with Creamy Pesto Sauce

Ingredients


350 gm Pasta, tortellini with cheese filling (or meat filling)
1/2 tbsp Extra virgin olive oil
454 gm Cremini (Italian) mushroom (pre-sliced)
4 cup Baby spinach (packed)
1/3 cup Basil pesto
1/2 cup Cream cheese (plain)

Instructions


  1. Cook tortellini as per package instructions.
  2. Meanwhile, warm olive oil in a wok or large-lipped fry pan. Add the mushrooms and sautee in oil until they begin to soften.
  3. Stir in the spinach and saute until wilted.
  4. Add the pesto and cream cheese and stir until the cream cheese has melted and everything is combined. 
  5. Once the tortellini is cooked, drain and add to the wok with the veggies and creamy pesto sauce. Toss to coat the pasta and serve.

Quick Tips:

  • If using cheese tortellini and would like a protein boost, try mixing in canned lentils or salmon.
  • Other veggie combinations that work well with this dish include:
    • Zucchini + cherry tomatoes
    • Canned artichoke hearts + sundried tomatoes
    • Asparagus + green peas
