Meatballs with Aromatic Mushroom Sauce

908 gm Cremini (Italian) mushroom (sliced, for sauce)
3 tbsp Extra virgin olive oil (for sauce)
1 1/2 tsp Kosher salt (for sauce)
2 tbsp Soy sauce (for sauce)
1 cup Coffee whitener (non dairy), liquid, soy creamer (for sauce)
908 gm Beef, ground, extra lean
1/2 cup Bread crumbs, plain
1/2 cup Water
1/2 medium Yellow onion (finely diced)
2 clove(s) Garlic (crushed)
1 tsp Kosher salt
1 dash Basil, dried
1 dash Oregano, dried


To prepare the mushroom sauce: Lightly sauté the mushrooms in oil and salt.

Add the almond milk and bring to a boil. Simmer for half an hour.

Add the non-dairy creamer and soy sauce, and simmer for another few minutes.

To prepare the meatballs: Put the breadcrumbs and water (or non-dairy milk) into a small bowl for 10 minutes until soggy. Gently mix the wet breadcrumbs with the rest of the meatball ingredients until just combined.

Roll the meat mixture into evenly sized balls and drop into the gently simmering sauce. Cook covered for 20 minutes, until cooked through. Do not overcook, or cook on too high, or the meatballs will fall apart.

Serve over fresh rice. Garnish with fresh herbs.
