Ingredients


2 medium White onion (chopped)
6 slice Bread, gluten free (cut into 1/2" cubes)
1/2 cup Extra virgin olive oil
4 large Egg
340 gm Yves Original Ground Round (1 package)
1/2 cup Red lentils, raw (160 gm cooked)
1/2 tsp Sea salt, fine
1/2 tsp Poultry seasoning (or any poultry seasoning)
1 tsp Sage, fresh
227 gm Dairy-free cheddar cheese shreds, Daiya
1/2 cup Tomato ketchup
1/4 cup packed Brown sugar
1/2 cup Water, filtered

Instructions


  1. Preheat oven to 350°F.
  2. Thoroughly rinse the lentils and remove any shriveled lentils, debris, or rocks. Transfer the rinsed lentils to a saucepan and pour in 1 cup water (add a bayleaf and a garlic clove for flavour if you want, but DO NOT add salt).
  3. Bring the water to a rapid simmer over medium-high heat, then reduce the heat to maintain a very gentle simmer. Cook, uncovered, for 20 to 30 minutes (add water as needed to make sure the lentils are just barely covered).
  4. Meanwhile, in a large skillet, saute the onions in olive oil until softened. Add the bread cubes and saute for another 3-4 minutes. Remove from heat.
  5. Mix the eggs, veggie burger, seasonings and cheddar in a large bowl. Add the onion/bread mixture and mix well. Press firmly into a lightly greased 2 quart baking dish.
  6. For the topping, whisk the ketchup, brown sugar and water together in a measuring cup or small bowl. Pour evenly over the loaf.
  7. Bake uncovered for 45 minutes.
