1 cup White onion (chopped)
3/4 cup diced Celery
1/2 cup chopped Carrots
1 tsp Garlic (minced (ok out of jar))
2 tsp Cumin (ground)
2 tsp Paprika
1 tsp Ginger, ground
1/2 tsp Turmeric, ground
1/4 tsp Salt
1/4 tsp Black pepper ((fresh preferred))
1 dash Cinnamon
1 dash Red pepper flakes (ground)
1 1/2 cup Water
2 tbsp Tomato paste, canned (no salt added)
2 can (15oz) Chickpeas, canned, drained (rinse)
2 can(s) (16 oz) Diced tomatoes, canned ((no salt added))
2 tbsp Cilantro (coriander) (chopped, fresh)
1 tbsp Lemon juice

Instructions


Heat oil in a large saucepan over medium-high heat.Add onion and next 3 ingredients; saute' 5 minutes. Stir in cumin and next 7 ingredients; cook 1 minute, stirring constantly. Add 1 1/2 cups water, tomato paste, chickpeas, and tomatoes; bring to a boil. Cover, reduce heat, and simmer 20 minutes.Stir in cilantro and juice.
