341 gm Chicken breast, boneless, skinless (pork, turkey, or steak work, too)
4 tbsp Butter, grass fed, unsalted
1 bundle Broccolini, baby broccoli (chopped into small chunks (including stems))
4 large Egg
114 gm Feta cheese, whole milk, crumbled
24 olive(s) Kalamata olives (give or take to your liking)
8 tbsp Sauerkraut

Instructions


This is a great meal for weekly meal prep, or you can make them one bowl at a time. 

For weekly meal prep:

  • CHICKEN: Once cooked, cut into bite-sized pieces. 
  • BROCCOLINI: Roughly chop into small pieces. 
  • EGGS: Consider boiling the eggs for the week, and once cool, peel them. (I like a fried egg with this dish, but either way could work)


To make the bowls:

  1. COOK THE CHICKEN: Place chicken on a rimmed baking sheet lined with parchment. Season with salt and pepper, and bake in a preheated oven (425*F) until internal temperature reaches 165*F (about 10-15 minutes). Remove from oven, once cool enough to handle, cut into bite-sized pieces. 
  2. COOK THE BROCCOLINI: Melt butter (avocado oil works great, too) in a preheated cast iron skillet over medium heat. Add broccolini and sautee for 3-5 minutes until just tender. Remove from skillet and set aside.
  3. COOK THE EGG: I like a fried egg for this dish, but if you're prepping ahead for the week, you may want to boil the eggs to your liking. For frying the egg, use the same skillet, and melt another pat of butter over medium-low heat. Add the egg and season with salt and pepper. Cover the skillet until the egg is cooked to your liking.
  4. ASSEMBLE THE BOWL: Place the chicken (or whatever meat you choose), broccolini, egg, sauerkraut, olives, and feta into a bowl, and enjoy!
