Ingredients


1 cup Cucumber (diced, cored)
1/4 cup Extra virgin olive oil
3/4 cup, crumbled Feta cheese
1 tsp Honey
1/3 cup Kalamata olives (pitted, chopped)
1/4 cup Lemon juice
1/2 tsp Oregano, dried
2 cup Orzo, dry
1/4 cup Parsley, fresh
1 medium pepper(s) Red bell pepper (diced)
1/4 cup Red onion (diced)
1 tsp Salt and pepper
1/3 cup Sun-dried tomato, packed in oil, drained

Instructions


In large pot of boiling lightly salted water, cook pasta according to package directions until al dente- about 7 minutes. Drain and rinse under cold water; drain again.

In large bowl, combine lemon juice, oil, honey, salt, pepper and oregano. Add pasta, red pepper, cucumber, feta cheese, olives, sun-dried tomatoes, parsley and onion; stir to combine.
