1 medium tortilla(s) | Whole wheat tortilla |
1/4 cup | Cactus (Nopales) |
1 medium | Egg |
2 tbsp | Salsa verde, ready to serve |
2 tbsp | Pinto beans, canned (can be smashed beans) |
1 tsp | Olive Oil, Extra Virgin |
1 tsp | Garlic salt |
1. Boil fresh cactus(nopales)in water 15 minutes, drain. (If prefer beans smashed can begin heating beans at this time.)
2. On medium heat add olive oil to sauce pan and cook cactus 5-10 minutes until they soft.( add 1 tsp of olive oil to beans, let boil)
3.crack egg over cactus (smash beans)
4. add garlic salt to taste
5. scramble egg and cactus
6. heat tortilla 15-30 seconds on heated griddle
7. add beans , egg and cactus, salsa verde to tortilla, roll up and Enjoy!
