| 2 tbsp | Lime juice (fresh) (dressing) |

| 1 dash | Red pepper flakes (dressing) |

| 1/2 cup | Brown rice, short-grain, cooked | 
| 1 cup | Chickpeas, canned, drained (rinsed) | 
| 4 tbsp | Salsa, ready-to-serve | 
| 1/2 cup | Red onion (diced ) | 
| 1/2 cup | Cherry Tomatoes (halved ) | 
| 2 tbsp | Cilantro (coriander) (chopped) | 
| 2 cup | Lettuce, romaine | 
In a bowl, combine all dressing ingredients. Once thoroughly mixed, pour dressing in the bottom of mason jars.
Layer remaining ingredients in the jar in order- rice first, followed by chickpeas, salsa, onions, tomatoes, cilantro and romaine. Close lid on top and shake jar when ready to eat.
